ARRIBA NACIONAL CACAO | The raw cacao bean is one of nature's most fantastic superfoods due to its mineral content and wide array of unique and varied properties. Cacao is the number one source of magnesium of any food on the planet, contains 314% of the US RDA of iron per serving, contains the highest concentration of antioxidants of any food in the world, and is also exceptionally rich in chromium, anandamide (the bliss chemical), theobromine, manganese, zinc, copper, vitamin C, omega-6 fatty acids, PEA, tryptophan, serotonin, and more.
Due to its extraordinary concentration of PEA and magnesium, cacao is likely the single greatest weight loss food out there because cacao contains more minerals and molecules that actually shut off the appetite than any other food. Contrary to popular opinion, cacao contains very little, if any, caffeine. The ONE FUDGE Chocolate Bar is derived from pure Criollo Ecuador Arriba Nacional Cacao beans. This cacao is grown in high-elevation volcanic soil that is brought down from the mountainous regions via donkey back. The Arriba Cacao trees are a minimum of 30 years old, and some have been growing for more than 80 years and only nourished from rain water or deep mountain spring water. They are never irrigated from potentially contaminated rivers and streams.
We guarantee the purity of our chocolate as 100% Arriba cacao by selecting the pods personally by hand and we never acquire product from aggregators. We only harvest the beans when they are fully mature and ripe. The cacao beans procured for The ONE FUDGE Chocolate Bar are processed in our own state-of-the-art facility on custom artisan equipment that has never seen any other cacao but our own, so there is no possible integration with lesser quality cacao. The cacao beans are always sun-dried and are never gas dried. The cacao remains 100% raw from start to finish. This is a true from "Pod to Paste" facility! Our Cacao Paste is created by stone-grinding the nibs into a smooth liquid state. The product remains liquid only as long as it is being ground and then solidifies at room temperature. There is no heat used in the process. We then have this paste shipped to our facility in NY where we then make the ONE FUDGE Chocolate Bar by hand in the old traditional style Copper Pot Bain-Marie.
Because we use such a pure quality cacao bean in the production of The ONE FUDGE Chocolate Bar, you will have zero jitters from this product. There is a complete lack of mycotoxins, mold, yeast, and fungus, which are what cause the adrenal response of jitteriness that is similar to caffeine stimulation in many cacao products. CINNAMON | The word cinnamon, the genus name, probably came from either the Arabic or the Hebrew language, but the species name cassia is from the Greek kassia, meaning to strip off the bark. Its use in Chinese medicine goes back to at least 2700 B.C.E. where it is referred to in several herbal formularies. It is, however, primarily known for the familiar flavor it imparts to any dish that it comes in contact with.
